How to Use It on Steak

  • Marinade Magic – Mix a splash of olive oil with a generous sprinkle of Coffee Chili Cocoa Rub and coat your steak. Let it rest for at least two hours or overnight for even deeper flavour.
  • The Bold Finish – Just before cooking, add another generous sprinkle of the rub as a dry seasoning to create a rich, flavour-packed crust.
  • Grill or Sear – Whether over open flames or in a cast-iron pan, this blend enhances the steak’s natural depth, adding smoky, slightly sweet, and bold umami notes.
  • Cooking Tips – If you’re cooking your steak straight away, prepare your grill to high heat and cook quickly on both sides for about three minutes. This slow-cooked taco filling is deep, smoky, and irresistibly tender, thanks to the bold flavours of coffee and chili.

Ingredients:

  • 2kg chuck steak (or flank steak), cut into four equal pieces
  • Generous coat of Coffee Chili Cocoa Rub
  • 3–4 cups freshly brewed coffee
  • Your favorite taco accompaniments (e.g., tangy mango relish or spicy chimichurri sauce)

Method:

  1. Coat the beef generously with Coffee Chili Cocoa Rub, rubbing it in well. Let it rest for an hour.
  2. Fire up the barbecue to high heat and sear the meat on all sides until dark in colour. A little charring adds depth to the flavour.
  3. Transfer the beef to a deep roasting pan and pour over 3–4 cups of freshly brewed coffee.
  4. Cover with foil and place in a 300°F oven for 5–6 hours, turning the meat every hour so each side simmers in the coffee.
  5. As it nears 5 hours, test the meat with a fork—it’s ready when it falls apart easily.
  6. Shred the beef with two forks, adding a cup or so of the coffee broth to keep it moist.
  7. Load up your tacos with the shredded beef and your favourite toppings.
