Pan-Seared West Coast Salmon
Ingredients
- 2 salmon fillets
- 1 tbsp olive oil
- 1 tbsp West Coast Searing Spice
- 1 tbsp butter
- Lemon wedges
Method
- Pat the salmon dry and coat evenly with West Coast Searing Spice.
- Heat the olive oil in a frying pan over medium-high heat.
- Sear the salmon skin-side down for 3–4 minutes.
- Turn the salmon, add the butter, and baste for a further 2–3 minutes, until golden and cooked to your liking.
- Serve with fresh lemon wedges.
West Coast Prawns & Garlic Noodles
Ingredients
- 12 large prawns, peeled and deveined
- 1 tbsp West Coast Searing Spice
- 1 tbsp butter
- 2 cloves garlic, minced
- 200 g cooked noodles (udon, ramen, or spaghetti)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 green onion, sliced
Method
- Toss the prawns with West Coast Searing Spice.
- Heat the butter in a frying pan and sauté the garlic until fragrant.
- Add the prawns and cook for 2–3 minutes per side until caramelized.
- Toss with the noodles, soy sauce, and sesame oil.
- Garnish with the sliced green onion and serve hot.
Spiced Tuna Tataki with Citrus Soy Sauce
Ingredients
- 1 tuna steak
- 1 tbsp West Coast Searing Spice
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tsp rice vinegar
- ½ tsp honey
- ½ tsp grated ginger
- ½ tsp sesame seeds
Method
- Coat the tuna evenly with West Coast Searing Spice.
- Heat the sesame oil in a frying pan over high heat.
- Sear the tuna for 30–45 seconds per side for rare, or slightly longer for medium-rare.
- Slice thinly.
- Mix the soy sauce, rice vinegar, honey, and ginger together, then drizzle over the tuna.
- Finish with the sesame seeds.
West Coast Spiced Roasted Carrots
Ingredients
- 4 large carrots, sliced diagonally
- 1 tbsp olive oil
- 1 tsp West Coast Searing Spice
- 1 tsp honey
- ½ tsp sea salt
Method
- Preheat the oven to 400°F.
- Toss the carrots with the olive oil, West Coast Searing Spice, honey, and salt.
- Roast for 25 minutes, turning halfway through.
- Serve alongside grilled fish or meats.

Ingredients
- ½ cup popcorn kernels
- 2 tbsp butter, melted
- 1 tsp West Coast Searing Spice
Method
- Pop the kernels using an air popper or your preferred stovetop method.
- Drizzle with the melted butter.
- Toss with the West Coast Searing Spice and serve immediately.
