Smoky Alderwood Pasta Carbonara

Ingredients:

  • 400g spaghetti
  • 4 egg yolks
  • 1 cup grated Parmesan cheese
  • 150g pancetta, diced
  • 2 cloves garlic, minced
  • 1 tsp Alder Smoked Salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions:

  1. Cook spaghetti until al dente. Reserve ½ cup pasta water.
  2. Sauté pancetta in olive oil until crispy. Add garlic and cook briefly.
  3. Whisk egg yolks with Parmesan, Alder Smoked Salt, and black pepper.
  4. Toss hot pasta with pancetta, then slowly mix in egg mixture, adding pasta water as needed.

 

Grilled Alderwood-Smoked Salmon

Ingredients:

  • 2 salmon fillets
  • 1 tbsp olive oil
  • ½ tsp Alder Smoked Salt
  • ½ tsp cracked black pepper
  • 1 tsp lemon zest
  • 1 tbsp honey

Instructions:

  1. Rub salmon with olive oil, Alder Smoked Salt, pepper, and lemon zest.
  2. Grill over medium heat for 4-5 minutes per side.
