  • 1 tablespoon sugar
  • 1 teaspoon All Year Long Apple Pie Spice
  • 1 lb mixed nuts

Method:

Panna Cotta

Ingredients:

  • 1 cup double cream
  • 1 cup milk
  • 2 tsp All Year Long Apple Pie Spice
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 100g sugar
  • 3 leaves of gelatine

Method:

  1. Heat cream, milk, spice, and vanilla in a saucepan until it reaches a boil.
  2. Whisk yolks and sugar together, then slowly add the hot cream mixture while stirring.
  3. Return to the saucepan and bring to a gentle simmer before straining.
  4. Soak gelatine in cold water until soft, then drain and stir into the mixture.
  5. Pour into ramekins and refrigerate until set.

Poached Apple Compote

Ingredients:

  • 3 Granny Smith apples, peeled and diced
  • 1 cup apple juice
  • 1 tsp All Year Long Apple Pie Spice
  • 2 tbsp sugar

Method:

  1. Heat apple juice, sugar, and spice in a saucepan until boiling.
  2. Reduce heat and add apples, cooking until tender.
  3. Cover and let cool before serving.

Walnut Praline

Ingredients:

  • 1 cup sugar
  • 1 cup toasted walnuts

Method:

  1. Heat sugar with a small amount of water in a saucepan until it turns golden brown.
  2. Stir in walnuts and pour onto a greased parchment sheet to cool.
  3. Once hardened, pulse in a food processor until coarsely ground.

To Serve:
Run a knife around the panna cotta to loosen and turn onto a plate. Top with poached apple compote and sprinkle with walnut praline.
